The center loin of the tuna fish, the most tender part, fully trimmed, no bones, skinless, rectangular in shape – as in the name “Saku” which means block in Japanese , odorless and tender.  Ideal for sashimi and sushi, use in fresh salads with wasabi and soya sauce.
